OPERATING PROCEDURE (Continued)j .When the water in the Heater Tank Assembly has begun to boil, a maximumof 20 tray packs may be loaded into the tank in the following manner.(1) The trays are to be arranged on edge in two rows of ten.(2) The first tray should be located in the tank with the bottomof the tray against the side of the tank and the short side down.(3) Close covers on tank.It is not necessary to secure covers withthe catches.The catches are intended for use during transport.k. Closely monitor the pressure gage on the M2 burner unit while thetrays are being heated.l .After 45 minutes in the boiling water, the trays will have reachedthe serving temperature of 165°F (74°C).2-10
